What you should take for lunch! Chicken Fajita Bowls

Another extremely popular question I get asked is what can I bring to work for lunch, that stays well and heats up well. Well here's a chicken fajita bowl that should satisfy your craving until Fridays recipe is sent out. 

Meal prep, meal prep it's all about meal prep!

Ingredients
Chicken
  • 2 Large chicken breasts
  • salt & pepper
  • 2 Tablespoons of coconut oil
Salad
  • 2 cup basmati rice (cooked)
  • 2 bell peppers, sliced into strips
  • 2 tablespoons red onion, diced
  • 1 cup steamed peas
Vinaigrette: (simply combine and wisp)
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon ground cummin
  • 1 tablespoon lime juice
  • ¼ teaspoon pink salt
  • 3 tablespoons EV olive oil
  • 1 tablespoons balsamic vinegar
  • 2 tablespoons white wine vinegar
  • 1 tablespoon raw local honey 

Instruction;

Cook Chicken Over Medium heat use a liberal amount of coconut oil and salt and pepper the chicken to taste. Let cool! Save till the end.

Preparing Bowls:
  1. Cook the rice according to package directions. Allow to cool.
  2. In a large bowl, combine the rice (1/2 cup each), bell peppers, red onion and peas.
  3. Shake together the vinaigrette and add to the bowl. Toss to coat everything completely.
  4. Divide among lunch containers, topping it with the chicken.
  5. Refrigerate until you are ready to serve.
