When we think of comfort foods we do not necessarily think of healthy, but that doesn't always have to be the case. Ingredients are the king of your micro nutrient intake and being creative can turn your healthy eating diet into your delicious eating diet. So, lets take a page out of this Thursdays morning session ( Shout out to Ella!!!) with this Vegan or Not Goulash Recipe.
Ingredients:
Easy Cauliflower Rice![]()
Remove the Stems of a Large Cauliflower Head, Add Cauliflower, 1 /2 teaspoon salt to food processor and pulse until desired size. Saute' 1/4 cup of chopped garlic in avocado or grape seed oil for 3 minutes, add cauliflower and saute' an additional 8 - 12 minutes. Done!
And of course you can add other veggies to the saute'! Easy Zucchini Noodles![]()
Use a spiral-izer and spiral-ize 2-3 large zucchinis, add 3/4 teaspoon of salt and 1/4 teaspoon of black pepper and toss. Saute' 1/4 cup of chopped garlic in avocado or grape seed oil for 3 minutes then add zucchini and saute additional 8 minutes. Done! Do I have to say it again ... And of course you can add other veggies to the saute'!
