Vegan or Not Goulash, Easy Cauliflower Rice and Easy Zucchini Noodles!

EZ Vegan or Not GoulashDelicious Easy Vegan Goulash or Non Vegan Goulash!
When we think of comfort foods we do not necessarily think of healthy, but that doesn't always have to be the case. Ingredients are the king of your micro nutrient intake and being creative can turn your healthy eating diet into your delicious eating diet. So, lets take a page out of this Thursdays morning session ( Shout out to Ella!!!) with this Vegan or Not Goulash Recipe.


Ingredients:

  • 2 packed cups finely chopped white onion
  • 2 red bell peppers, chopped
  • 6 extra large cloves garlic, minced
  • 2 1/2 - 3 cups low-sodium broth (amounts added at different times)
  • 1-2 teaspoons fine pink salt
  • 3 1/2 tablespoons (Non Smoked) Paprika
  • 1/4 cup organic dry red wine
  • 8 small red or gold potatoes (do not use russet), chopped into 1/2 inch chunks
  • One 14.5 oz can of diced tomatoes with juices 
  • 1/2 teaspoon ground black pepper
  • (Optional) 1lb Organic Ground Turkey, Chicken or Bison. If you chose this road you may need to add more salt, pepper and paprika to taste.
Instructions:

  1. Have all of your vegetables chopped and ready to go before beginning, as the cooking process is fairly quick.
  2. Vegan Skip to step 3 Not Add a pound of organic ground chicken, turkey or my personal favorite Bison.
  3. In a large pot, Add the onion, bell peppers, garlic, Saute' medium- low heat for 20 minutes (use a neutral flavor oil such as grape seed or avocado)
  4. Add 1 cup of the broth and 1 teaspoon of the salt to the pot and continue over medium heat, boil until broth evaporates. You want the broth gone before adding the wine, this will keep the sauce thick and not watery at the end.
  5. Add the paprika and wine and cook for about 3 minutes.
  6. Add the potatoes, tomatoes, pepper, another 1/2 teaspoon salt and the remaining broth. Start out with 1 1/2 cups and add more if desired or needed to cook the potatoes. I used the full 2 cups because my potatoes needed it and I wanted it a bit saucy. Stir well and turn the heat to high. Once it comes to a boil, cover and lower the heat to medium-low. Cook for about 15-20 minutes until the potatoes are tender, but not mushy. Taste and add any more salt or paprika. I added another 1/4 teaspoon or so of salt. Serve immediately either as is, over your cauliflower rice or with your Zucchini Noodles.

Cauliflower RiceThe Easiest way to make Cauliflower rice!
​Remove the Stems of a Large Cauliflower Head, Add Cauliflower, 1 /2 teaspoon salt to food processor and pulse until desired size. Saute' 1/4 cup of chopped garlic in avocado or grape seed oil for 3 minutes, add cauliflower and saute' an additional 8 - 12 minutes. Done!

And of course you can add other veggies to the saute'!


Easy Zucchini Noodles

Super EZ Zucchini Noodles!Leave Skin on or off in this delicious recipe!

​Use a spiral-izer and spiral-ize 2-3 large zucchinis, add 3/4 teaspoon of salt and 1/4 teaspoon of black pepper and toss. Saute' 1/4 cup of chopped garlic in avocado or grape seed oil for 3 minutes then add zucchini and saute additional 8 minutes. Done!

Do I have to say it again ...
And of course you can add other veggies to the saute'!
