TRAINER JOES BLOG![]() Just one more Pancake Recipe, I promise! This one features Sweet Potatoes and is way more breakfast friendly than my last pancake recipe. Personally, I think you need to be a bit of a chef to be healthy. Ingredients: 1/2 cup pre-mashed sweet potatoes (boil to cook, drain, and then mash) 2 whole eggs 1 tbsp coconut flour 1 tsp cinnamon 1/8 tsp nutmeg 1/4 tsp baking soda 1 drop vanilla extract 2 tsp Stevia 1 tbsp coconut oil2. 2 tbsp organic maple syrup Directions: 1. Combine all ingredients in a food processor and blend slowly, adding in the sweeteners last. 2. Coat a griddle or flat frying pan with a coconut oil and preheat it to a medium heat. 3. Pour pancake batter onto the griddle. (Pancake 101 ... Let batter cook until the edges are bubbling, and then flip and cook them for an additional 2-3 minutes.) 4.
